Akuri Eggs

Parsi spiced scrambled eggs. Serves 1.

- 3 eggs
- 1/2 tsp cumin seeds
- 1 chilli deseeded and finely chopped
- 1 med tomato, diced
- 1 onion, diced
- 1 tsp turmeric
- 1 clove garlic
- coriander leaf
- salt to taste
- Whisk eggs with a pinch of salt and put to one side
- Heat 1 tbsp oil (or butter) in a small pan and add cumin seeds for 30s (splutter)
- Add onion, chilli, tomato, and garlic and sautee until the tomatoes have broken down
- Add the turmeric for 30s
- Turn the heat right down. Add the eggs, cooking until desired firmness
- Serve with coriander and yoghurt
